Abstract

सारांश

इस अध्ययन के अन्तर्गत मोटे अनाजों द्वारा निर्मित विभिन्न व्यंजनों को निर्मित कर उनका मूल्यांकन किया गया वखाद्यव पोषण सुरक्षा में मोटे अनाज के महत्व का भी अवलोकन किया गया। इसके लिये कंगनी, सांवा, रागी वचावल के भौतिक, रासायनिक, कार्यात्मकव पोषण सम्बन्धी गुणों का विष्लेषण किया गया साथ ही उपरोक्त अनाजों के द्वारा तैयार किये गये खाद्य उत्पाद (लड्डू, हलवा व पुलाव) के संवेदी व पोषण सम्बन्धी गुणों का भी मूल्यांकन किया गया। अनाजों के भौतिक-रासायनिक परीक्षणों में 1000 दानों का वजन क्रमषः कंगनी का 3.33 ग्राम, रागी का 2.73 ग्राम, सांवा का 3.43 ग्राम तथा चावल का 19.0 ग्राम पाया गया। इसी प्रकार 1000 दानों का आयतन क्रमषः 1.33 मि0ली0, 1.75 मि0ली0, 2.07 मि0ली0 व 8.13 मि0ली0 पाया गया। पोषण विष्लेषण में नमी की मात्रा कंगनी में 9.29%, रागी में 12.85%, सांवा में 11.40% तथा चावल में 12.08% पायी गयी। कंगनी में 10.34% प्रोटीन, 3.13% वसा, 4.32% रेषा व 68.89% कार्बोहाईड्रेट पाया गाया। रागी में 6.80% रेशा तथा 71.39% कार्बोहाईड्रेट पाया गया। सांवा में 6.89% प्रोटीन, 3.60% वसा, 2.96% रेशा व 71.86% कार्बोहाईड्रेट पाये गये। जबकि चावल में 6.22% प्रोटीन, 0.57% वसा, 2.23% रेषा व 81.84% कार्बोहाईड्रेट दर्ज किया गया। संवेदी मूल्यांकन के अनुसार रागी से तैयार लड्डू और हलवा सर्वाधिक पसन्द किये गये, जबकि कंगनी से तैयार पुलाव अन्य सभी की तुलना में अधिक पसंद किये गये। अध्ययन के निष्कर्षों से स्पष्ट होता है कि सांवाव कंगनी का पोषण मूल्य चावल की तुलना में अधिक गुणवत्ता पूर्ण है। इसलिये इन मोटे अनाजों को पारम्परिक खाद्यपदार्थों को सम्मिलित करने से पोषण स्तर में सुधार व खाद्यवपोषण सुरक्षा को बढावा दिया जा सकता है।

 

Abstract

This study investigates the potential of millets to bolster food and nutritional security by analyzing the physicochemical, functional, and nutritional properties of foxtail millet (Setaria italica), barnyard millet (Echinochloa frumentacea), finger millet (Eleusine coracana), and rice (Oryza sativa). It also evaluates the sensory and nutritional qualities of their derived products (laddu, halwa, pulaav). Physicochemical tests showed thousand kernel weights of 3.33 g (foxtail), 2.73 g (finger), 3.43 g (barnyard), and 19.0 g (rice), with thousand kernel volumes of 1.33 mL, 1.75 mL, 2.07 mL, and 8.13 mL, respectively. Nutritional analysis revealed moisture contents of 9.29% (foxtail), 12.85% (finger), 11.40% (barnyard), and 12.08% (rice). Foxtail millet had 10.34% protein, 3.13% fat, 4.32% fibre, and 69.89% carbohydrates; finger millet had 6.80% protein, 1.75% fat, 3.19% fibre, and 71.39% carbohydrates; barnyard millet had 6.89% protein, 3.6% fat, 2.96% fibre, and 71.86% carbohydrates; rice had 6.22% protein, 0.57% fat, 0.23 2.23% fibre, and 81.84% carbohydrates. Sensory evaluations indicated finger millet laddu (8.83±0.21) and halwa were most preferred, while foxtail pulaav outperformed others. The findings highlight foxtail and barnyard millets’ superior nutritional profiles compared to rice, supporting their integration into traditional foods to enhance nutrition and food security.
