उत्तराखंड के घुरदौरी क्षेत्र के परिधीय गाँवों में पाए जाने वाले जंगली एवं स्थानीय रूप से एकत्रित खाद्य पौधे एक ऐसी परंपरा का हिस्सा हैं, जिस पर अभी तक पर्याप्त शोध नहीं किया गया है। ये पौधे क्षेत्र में मौसमीया संकट-सम्बंधी बाजार व्यवधानों के दौरान खाद्य सुरक्षा बनाए रखने में महत्वपूर्ण भूमिका निभाते हैं। इस अध्ययन में इन पौधों की प्रजातियों तथा उनसे संबंधित पारंपरिक व्यंजनों का दस्तावेजीकरण किया गया। साथ ही, उद्धरण आवृत्ति (FC) और उद्धरण की सापेक्ष आवृत्ति (RFC) के आधार पर इन के सांस्कृतिक महत्व का आकलन किया गया तथा पौधों के जीवन-रूप और मौसमी उपलब्धता के उनके उद्धरण पर पड़ने वाले प्रभाव निर्धारित किए गए। अध्ययन के लिए दस गाँवों के 36 सूचनादाताओं से प्रत्यक्ष साक्षात्कार, सहभागी अवलोकन और प्रश्नावली के माध्यम से डेटा एकत्र किया गया। कुल 27 वनस्पति कुलों से संबंधित 45 पौध प्रजातियाँ दर्ज की गईं। इन प्रजातियों का RFC मान 0.19 से 0.97 के बीच पाया गया, जो इनके सांस्कृतिक महत्व में उच्च स्तर की विविधता को दर्शाता है। शाकीय (herbaceous) पौधे सर्वाधिक सामान्य थे, जिनके बाद वृक्ष, झाड़ियाँ और आरोही/लताएँ पाई गईं। ऐसी पौध प्रजातियाँ, जो संबंधित मौसम में आसानी से उपलब्ध और प्रचुर मात्रा में होती हैं, स्थानीय समुदाय द्वारा अधिक उपयोग की जाती थीं। पौधों के पत्ते और बीज सबसे अधिक उपयोग किए जाने वाले भाग थे, जिनका उपयोग उनके पोषण मूल्य तथा विभिन्न प्रकार के खाद्य पदार्थों में उपयोगिता के कारण किया जाता था। दस्तावेजीकृत पौध प्रजातियों का उपयोग विभिन्न पारंपरिक खाद्य तैयारियों जैसे साग, सब्जी, चटनी, मिठाई, पेय पदार्थ और अचार में किया जाता था, जो दैनिक तथा मौसमी आहार में इनके नियमित उपयोग को दर्शाता है। पौधे के जीवन-रूप और RFC के बीच कोई महत्वपूर्ण सांख्यिकीय संबंध नहीं पाया गया (Spearman ρ = -0.255, R2 = 0.065, p = 0.626)। इसके विपरीत, मौसमी उपलब्धता और RFC के बीच मध्यमस्तर का सहसंबंध पाया गया (Spearman ρ = -0.673, R2 = 0.452, p = 0.068)। इससे संकेत मिलता है कि स्पष्ट मौसमी उपलब्धता वाली प्रजातियों का उल्लेख वर्षभर उपलब्ध रहने वाली प्रजातियों की तुलना में अधिक बार किया गया। अध्ययन के परिणाम इस बात पर बल देते हैं कि इन सांस्कृतिक रूप से महत्वपूर्ण तथा सीमित मौसमी उपलब्धता वाली पौध प्रजातियों से संबंधित पारंपरिक एथ्नोबॉटनिकल ज्ञान का संरक्षण खाद्य सुरक्षा और जैवविविधता संरक्षण दोनों के लिए महत्वपूर्ण है। साथ ही, हिमालयी क्षेत्र में पारंपरिक ज्ञान के क्षरण एवं संभावित ह्रास को रोकने के लिए इस काव्य वस्थित दस्तावेजीकरण आवश्यक है, ताकि सतत खाद्य प्रणालियों तथा जैवविविधता के संरक्षण को सुनिश्चित किया जा सके।

 

Abstract

The wild and locally collected edible plants of the peripheral villages in the Ghurdauri region, Uttarakhand, are an under-researched tradition that plays a vital role in food security during market disruptions, whether seasonal or crisis-related. This study records these species and associated traditional recipes, assesses their cultural importance based on Frequency of Citation (FC) and Relative Frequency of Citation (RFC) and investigates the effect of plant life-form and seasonality on citation. The data were collected from 36 informants in 10 villages through direct interviews, participant observation, and questionnaires. Forty-five species from 27 botanical families were recorded, with RFC values ranging from 0.19 to 0.97, indicating high heterogeneity in cultural importance. Herbaceous species were the most common, followed by trees, shrubs, and climbers, with those that were easily available and abundant in season being used; leaves and seeds were the most common plant parts used, for both nutritional value and versatility. The documented species were used in various traditional preparations such as saag, sabji, chutneys, desserts, beverages and pickles, indicating their regular use in daily and seasonal diets. There was no significant relationship between plant life-form and RFC (Spearman ρ = -0.255, R2 = 0.065, p = 0.626), but there was a moderate correlation between seasonal availability and RFC (Spearman ρ = -0.673, R2 = 0.452, p = 0.068), with species with defined seasonal windows being cited more frequently than year-round taxa. The results emphasize the importance of ethnobotanical knowledge of these culturally relevant and narrowly seasonal species as conservation and food security priorities and the need to document the loss of this knowledge to ensure sustainable food systems and conservation of biodiversity in the Himalayan region.
