थार मरुस्थल के देशज फसल-पादप पारंपरिक वर्षा-आधारित कृषि प्रणालियों के अभिन्न अंग हैं, जो विषम मृदा एवं जलवायु परिस्थितियों में स्थानीय लोगों को खाद्य, चारा एवं औषधीय संसाधन उपलब्ध कराते हैं। प्रस्तुत अध्ययन में चयनित देशज फसल-पादपों का दस्तावेजीकरण, फसलोत्तर प्रबंधन प्रोटोकॉल का विकास तथा खेत स्तर पर सुखाने के माध्यम से मूल्य संवर्धन पर ध्यान केंद्रित किया गया। अध्ययन में वृक्ष, झाड़ियाँ एवं वार्षिक फसलों के रूप में खेजड़ी (Prosopis cineraria), केर (Capparis decidua), लसोड़ा (Cordia myxa), खींप (Leptadenia pyrotechnica), फोग (Calligonum polygonoides), झरबेर (Ziziphus nummularia), बोरड़ी (Ziziphus rotundifolia), कुमट (Acacia senegal) तथा देशी सब्जियों जैसे ग्वारफली (Cyamopsis tetragonoloba), काचरी (Cucumis melo var. callosus), काकड़िया (Cucumis melo var. momordica), टिंडा (Praecitrullus fistulosus) एवं पानमेथी (Trigonella corniculata) को शामिल किया गया। उत्पाद की गुणवत्ता एवं भंडारण अवधि में सुधार के लिए कटाई की उपयुक्त अवस्था, ब्लांचिंग तथा धूप में सुखाने की मानकीकृत विधियाँ विकसित की गईं, जिससे असमानता एवं निम्न गुणवत्ता से संबंधित समस्याओं का समाधान किया जा सके। चयनित पौधों से प्राप्त सूखे उत्पादों के समीपस्थ संघटन, जैवरासायनिक एवं खनिज विश्लेषण से पता चला कि सांगरी (खेजड़ी की सूखी फलियाँ), ग्वारफली तथा कुमट के बीज प्रोटीन, वसा, एंटीऑक्सीडेंट एवं आवश्यक खनिजों से समृद्ध हैं। इनमें विशेष रूप से फोगला (फोग की अपरिपक्व पुष्प कलियाँ) एवं सांगरी में फेनोल तथा फ्लेवोनॉयड जैसे महत्वपूर्ण जैव सक्रिय यौगिक पाए गए। अध्ययन इन देशज पौधों की न्यूट्रास्यूटिकल एवं कार्यात्मक खाद्य पदार्थों के रूप में उपयोगिता, उनकी पोषणीय विविधता तथा कठोर जलवायु के प्रति अनुकूलन क्षमता को रेखांकित करता है और इनके सतत उपयोग की संभावनाओं को दर्शाता है। इन पारंपरिक फसल-पादपों को बढ़ावा देने से पोषण सुरक्षा में वृद्धि, स्थानीय आजीविका को समर्थन तथा शुष्क क्षेत्रों की जैव विविधता के संरक्षण में योगदान मिल सकता है।
Abstract
The indigenous crop plants of Thar Desert are integral to traditional rain-fed cropping systems, providing food, fodder, and medicinal resources to local inhabitants under extreme edaphoclimatic conditions. This study focuses on documentation, developing post-harvest handling protocols and value addition through on-farm drying of selected indigenous crop species, including trees, shrubs, and annuals such as khejri (Prosopis cineraria), ker (Capparis decidua), lasoda (Cordia myxa), kheemp (Leptadenia pyrotechnica), phog (Calligonum polygonoides), jharber (Ziziphus nummularia), bordi (Ziziphus rotundifolia), kumat (Senegalia senegal) and native vegetables like guarphali (Cyamopsis tetragonoloba) kachri (Cucumis melo var. callosus), kaakdia (Cucumis melo var. momordica), tinda (Benincasa fistulosus) and paan-methi (Trigonella corniculata). Standardized harvesting stage, blanching, and sun-drying protocols were developed to improve product quality and shelf life, addressing challenges of non-uniformity and inferior quality. Proximate, biochemical, and mineral analyses of dried products of selected eight plant species revealed that products like sangri (dried pods of khejri), guarphali, and kumat seeds are rich in proteins, fats, antioxidants, and essential minerals, with notable bioactive compounds such as phenols and flavonoids, especially in phogla (unopened flower bud of phog) and sangri. The study highlights the potential of these native plants as nutraceuticals and functional foods, emphasizing their nutritional diversity, adaptability to harsh climates, and depicted prospects for sustainable utilization. Promotion of these traditional crop-plants can enhance nutritional security, support local livelihoods, and contribute to the conservation of arid-region biodiversity.
